This is one of my very favorite winter meals. It's my take on an old-time crowd-pleaser, is my style of comfort food and happens to be hearty meal that doesn't require a large amount of effort. Enjoy!
[THE RECIPE]
For the Meatloaf:
1 lb pasture-raised ground turkey
1 small onion, minced
4 garlic cloves, minced
1/4 cup fresh parsley, chopped [optional]
juice from 1/2 a lemon [appx. 1 tablespoon]
1 teaspoon dried thyme
1 teaspoon maple syrup
3/4 teaspoon Herbamare [or 1/2 teaspoon onion powder + 1/4 teaspoon garlic powder]
1/2 teaspoon ground rosemary
1/4 teaspoon chaga mushroom powder [optional]
Ketchup [optional]
Mix all ingredients [except Ketchup if you are using] in a medium size, glass bowl. Pour mixture into a glass bread baking dish and press down firmly. Squeeze ketchup over flattened loaf if desired.
Bake at 350 degrees for 60 minutes.
Remove from oven and let cool for 10 minutes to allow the juices to soak back in a bit.
For the Mashed Sweet Potatoes:
2 large sweet potatoes, peeled and cubed
2 medium white potatoes, peeled and cubed
1 small celery root, peeled and cubed
ghee
sea salt
Place potatoes and celery root in a medium pan. Fill with water so water comes about 1-inch above the veggies. Add a pinch of sea salt and bring to boil over high heat. Reduce heat to medium [or to simmer] and cook until veggies are very tender when poked with a fork.
Remove from heat and drain water. Add 2 - 3 large tablespoons of ghee and sea salt to taste. Blend with mixer and crush with potato masher. Add more ghee or salt as needed.
For the Kale:
4 cups kale leaves, shredded
1 tablespoon ghee
granulated garlic
sea salt
Melt ghee over medium-high heat in large cast iron or stainless steel skillet. Carefully add kale and sprinkle with garlic and salt. Mix to coat kale in ghee and seasoning. Stir frequently until kale has wilted, softened, and turned a bright shade of green. Remove from heat and serve immediately.

POST-TRAVEL VEGETABLE SOUP with ground turkey
After a week of traveling my family's immune systems are a bit exhausted. This recipe comes from that place - a desire for warm, simple nourishment.
[THE RECIPE]
Note: This recipe uses carrot and fennel tops, referring to the green leaves or "tops" of the carrots and fennel. If you don't have access to these [being it's winter], save this sauce recipe and come back to it in the summer when greens are abundant. Often, the tops of carrots and fennel are disposed of but they are usable, delicious, and make an awesome [green!] addition to soups, pasta, and roasted vegetables, especially in the winter months when fresh greens are scarce.
1 medium - large yellow onion, peeled and chopped into small pieces
2 T. ghee or coconut oil
2 large garlic cloves, minced
1 1/2 T. fresh ginger, minced
1 1/2 T. fresh ginger, minced
1 celeriac or celery root, peeled and cut into small cubes
4 c. carrots, minced using food processor or blender
2 c. celery stalks and leaves, thinly sliced
3 medium size sweet potatoes, peeled and cut into small cubes
4 c. turkey bone broth
2 - 4 c. water
1 lb. ground turkey
2 tsp. sea salt [if using store bought broth, eliminate salt and add only as necessary]freshly ground pepper
1 10 - 12 oz. bag of cut frozen green beans
1 10 - 12 oz. bag of chopped frozen kale4 ounce jar of carrot and fennel top sauce [see recipe below], optional
black sea salt, optional
dulse flakes, optional
For the sauce:
4 c. fennel tops or green leaves
4 c. carrot tops or green leaves
extra virgin olive oil
Place the greens in a blender and add about a half cup of olive oil. Blend on high, scraping sides or using tamper to push the greens into the oil. Add oil as necessary until a sauce or dressing like consistency has been achieved. Pour into 4-ounce ball jars, cover tightly and freeze until needed.
Prepare all vegetables by peeling and chopping as noted. Set aside.
Warm ghee or coconut oil over medium heat. Once melted, add chopped onion and toss to coat. Saute, stirring occasionally, until onions begin to soften and become transparent, 5 - 7 minutes.
Add minced garlic and ginger and saute until aromatic, about 5 minutes. Add celeriac and cook for 3 minutes. Toss in carrots, celery, and sweet potato. Cook for an additional 5 minutes.
Pour in turkey broth and water. Bring to boil over medium-high heat. Reduce heat to simmer, cover, and cook for 20 - 30 minutes or until sweet potato is tender when poked with a fork.
While the soup is cooking, place thawed ground turkey in a large skillet over medium-high heat. Sprinkle with sea salt and pepper and cook until meat is thoroughly done and no pink is visible. Set aside.
Once sweet potatoes are tender, reduce heat to low. Add cooked turkey, green beans, kale, and sauce. Cook until beans are bright green and tender.
Spoon into bowls and garnish with black sea salt and dulse flakes.

TURKEY SALAD [EGG, NUT, GLUTEN, AND DAIRY FREE]
homemade dairy, soy, and egg-free attempt to satisfy a craving and use up a turkey I had tucked away in the freezer around Thanksgiving.
[THE RECIPE]
1 c. water
1/2 c. hemp seeds
1/4 c. olive or caper juice [optional]
3 T. dijon mustard
2 T. raw honey
1 lemon, juiced [about 2 T. lemon juice]
1 - 2 garlic cloves, peeled
1 tsp. sea salt
1 tsp. sweet paprika
1/2 tsp. onion powder1 tsp. sweet paprika
1/4 tsp. turmeric powder
1/4 tsp. smoked paprika
freshly ground pepper, to taste
2 c. extra virgin olive oil
1/2 - 1 c. loosely packed fresh dill leaves, stems removed, to taste
1/4 c. loosely packed fresh chives, finely chopped
breasts of one turkey or two chickens [organic, pasture raised, local if possible], roasted* or cooked and shredded
In a high-speed blender, combine water, hemp seeds, olive or caper juice, dijon mustard, honey, lemon, garlic, salt, paprika, onion powder, turmeric powder, smoked paprika, pepper, and oil. Blend on high until very smooth and creamy. Taste and add salt or pepper as needed. Set aside.
1/2 - 1 c. thinly sliced radishes
1/2 - 1 c. thinly sliced celery
Fill a medium bowl 3/4 of the way full with water and ice. Set aside. Bring water to boil in a medium stainless steel pot. Add radishes and celery and blanch for 1 minute in boiling water. Remove vegetables and place in ice water. Let cool for a couple minutes and then strain.
In a large glass bowl, combine cooked and shredded turkey or chicken and blanched vegetables. Slowly add prepared dressing a 1/2 cup or so at a time until the meat and vegetables are thoroughly covered. Serve warm as sandwich, on a bed of greens, or on a bed of kale rubbed with a little olive oil to soften or refrigerate until ready to serve. Garnish with raw sauerkraut, olives or capers, toasted nuts or seeds, avocado, pickles, etc.
*[ROASTED TURKEY]1 lemon, washed and cut into wedges
1 large handful each of fresh dill and chives
1 - 2 T. extra virgin olive oil
2 tsp. sweet paprika
1 tsp. smoked paprika
1 - 2 tsp. sea salt
1/2 - 1 tsp. freshly ground peppercorns
Thaw turkey in refrigerator. This may take a few days so plan ahead. Prior to baking, remove bag of giblets from inside of turkey. Place the bird in a large glass baking dish and rub whole turkey with a little olive oil, paprika [sweet and smoked], sea salt, and freshly ground pepper. Stuff inside cavity of the bird with the lemon wedges and fresh herbs
Fill baking dish with 2 - 4 cups of water or enough to have about 1/2 inch of water in the bottom of the dish..
Cover entire dish with tinfoil and roast at 325 degrees F for 2 - 3 hours or until the inner temperature [thermometer in thigh] reaches 165 - 170 degrees. Uncover for last 15 minutes.
Remove from oven and let stand at room temperature for 20 minutes to cool enough to slice.
